Sopita

Ingredients:

• 2 pounds bone in skin on chicken thighs, or any chicken you prefer

• 2 cups pasta of your choice 

• 2 15oz cans of tomato sauce, or any tomato products even fresh tomatoes 

• 4 cups chicken broth or water

• 1 onion

• 2 jalapeños

• 1 bell pepper I use red or orange 

• 6 cloves of garlic, more or less if you like

• 4 tbs olive oil

• 2 potatoes (optional)

• 2 zucchini (optional)

• 1 cup corn (optional)

• 2 tsp salt

• 1 tsp black pepper 

• 1 tsp paprika 

• 2 tsp garlic powder

• 2 tsp cumin

• 1 tsp chili powder

• 2 bay leaves 

• toppings optional, cilantro, avocado, sour cream, shredded cheese, hot sauce 

 

instructions: 

1. In a 6 quart saucepan on medium high heat. Put 2 tbs of olive in, when pan is hot brown chicken thighs skin side down until they easily release from the pan. Brown on both sides.

2.Roughly chop your peppers onion and garlic you'll be blending them later so don't worry about getting them small. Throw them in the pan with the chicken and let them sauté for a few mins until they get some color on them. 

3. Pour in tomato's and broth. Add the seasonings and bay leaves. Let simmer on low for at least an hour. After that time check chicken with thermometer to see if its reached 165 degrees.

4. Take chicken out set aside. Remove bay leaves. Let the it cool for a few mins. Transfer to blender and blend until smooth.

5. Chop zucchini in one inch cubes. Peel and chop potatoes in one inch cubes. In the same pan on medium high heat put one tbs olive and sauté zucchini until almost completely done. Remove zucchini set aside.

6. In same pan put 1 tbs olive oil and toast pasta until it's golden. Add in your soup that's in the blender and your potatoes, cook for around 8 to 10 mins, until the pasta is soft and potatoes are fork tender.

7. Now that the chicken is cool debone the chicken and remove the skin. Pull or cut chicken in to desired size. Add the chicken, zucchini and corn in to the soup. Bring up to heat again and enjoy!.
