S(no)w Bake Cookies

Ingredients:

~ 1 1/2 cups of quick cooking oats

~ 1/2 cup flaked coconut (optional, substitute 1/4 cup oats)

~ 1/4 peanut butter (optional)

~ 3/4 cup sugar

~ 1/4 cup milk

~ 1/4 cup butter

~ 3 tablespoons unsweetened cocoa powder

~ pinch of salt

 

Instructions: 

1. In a medium bowl combine oats and coconut set aside.

2. In 2 quart sauce pan over medium heat stir together peanut butter, sugar, milk, butter and cocoa powder. Stir continuously until it comes to a boil. Stir while boiling for 1 min then turn off heat. 

3. Stir in oat mixture. Quickly drop about a tablespoon of the mixture on a parchment lined sheet pan.

4. Stick them in your refrigerator or freezer...or if its cold enough outside just let them chill out there for a bit (as pictured above) then enjoy

 

Note: Store in refrigerator in air tight container. This recipe is so versatile you can add most anything you want, any kind of nuts or maybe candy. Great to make with kids! especially on a cold snowy day or anytime of the year. Leave a comment if you'd like a healthier version!.
