Roast, Potatoes and Carrots

Ingredients: 

~ 1 chuck roast, lamb roast or deer roast

~ 4 to 6 potatoes (optional)

~ 1 pound carrots (optional)

~ 1 onion

~ 5 or more cloves of garlic

~ 3 tablespoons of olive oil

~ 1/4 soy sauce or bragg aminos

~ 2 tablespoons worcestershire

~ 1 tablespoon A1 (optional)

~ 1 teaspoon of salt

~ 1 teaspoon of pepper

~ 1 teaspoon of garlic powder

~ 1 teaspoon of onion powder

~ 2 bay leaves (optional)

~ 6 cups or more of water

Note: (If you want to make it a bit easier skip out on the dry seasonings and just add a packet of onion soup mix) Mushrooms also go so well in this just add them in with the other veg if you'd like.

 

Instructions:

1. In a 6 quart pan over high heat, heat olive oil. Sear roast on both sides. 

2. Peel and cut onion in half or dice depending on if you want to pull it out later or eat it in the dish. Peel garlic, you can leave it whole or chop it. Throw the onion and garlic in with the meat and give them a quick sear as well.

3. Pour the 6 cups of water over the roast, add more water if need be until its at least an inch over the roast. Add the soy sauce, worcestershire, A1, salt, pepper, garlic powder, onion powder and bay leaves (or onion soup mix) give it a stir. Bring to a boil then turn to medium low so its just at a low boil. Cook for 4 to 8 hours

4. While your roast is cooking peel and cut potatoes and carrots in to about 2 inch pieces or just use baby carrots and fingerling or petite potatoes, either way works great. 

5. At the last hour of cooking make sure the water is still covering the roast, add in carrots first then potatoes in to the pan let them cook for the whole hour. Test potatoes and carrots to see if they are fork tender, if so you're ready to enjoy!

 

Note: If you'd like to make a gravy, strain out the broth and whisk in a cornstarch slurry (equal parts,1 tablespoon cornstarch and water mixed together) while broth is boiling, add salt to taste.
