Ingredients:
Pound Cake
~ 2 cups butter
~ 3 1/2 cups sugar
~ 6 large whole eggs
~ 6 large egg yolks
~ 1 tablespoon vanilla
~ 1 teaspoon of salt
~ 1 tablespoon baking
~ 3 1/2 cups flour
Strawberries in Strawberry sauce
~ 1 16oz package of fresh strawberries
~ 1/4 cup sugar
Whipped Cream
~ 2 cups heavy cream
~ 1/4 cup powdered sugar
~ 1 teaspoon vanilla
Instructions:
Pound Cake
1. Preheat oven to 350. Grease and flour a 10 inch tube pan, a 12 cup bundt pan or 2 loaf pans that have a heavy bottom. Don't use a thin metal one, the sides will burn.
2. In large bowl with hand mixer beat soften butter for 2 mins, stop half way through to scrape the bowl, add the sugar and beat until lighter in color and fluffy.
3. In medium bowl combine whole eggs, egg yolks, vanilla and salt, beat for 30 seconds. Slowly add egg mixture to the sugar and butter, once they are mixed thoroughly scrape down sides and beat for another 1 to 2 mins.
4. In a medium bowl sift together flour and baking powder. Slowly add in flour mixture until almost totally combined, scrape down sides and finish mixing by hand, don't over mix.
5. Pour batter in to desired pan, cover loosely with tinfoil half way through baking , bake for 45 to 55 mins or until tooth pick or knife inserted in the center comes out clean.
Strawberries in Strawberry Sauce
1. Wash strawberries and cute the tops off, slice or dice them and pour sugar over them and mix. Store in an air tight container in the fridge for at least a few hours but preferably overnight.
2. After they sit, to make the strawberry sauce drain all the juice in to a blender and add about 1/3 cups of the strawberries and blend until smooth, add back in to strawberries and mix.
Whipped Cream
1. Add cream to large bowl add in powder sugar and vanilla, beat on low until it starts to thicken then turn it up to high until peaks form. Your ready to serve, layer it however you like and we like to add ice cream on the side, our favorite is Blue Bell French Vanilla or Turkey Hill Triple Vanilla. enjoy!.
