Ingredients:
Dressing
~ 1 whole bulb of garlic
~ 1 lemon
~ 1/4 cup olive oil
~ 1/4 teaspoon of salt
~ 1/8 teaspoon pepper
Shrimp
~ 1/2 pound shrimp pealed and deveined
~ 1 teaspoon old bay
~ 1 teaspoon garlic
~ 1/2 teaspoon salt
~ 1/4 teaspoon pepper
~ 2 tablespoons butter
~ 1 tablespoon olive oil
Croutons
~ 1 cup good quality cubed stale bread
~ 1 teaspoon garlic
~ 1/2 teaspoon salt
~ 2 table spoons of olive oil
Salad
~ 1 medium head of romaine lettuce
Note: Fresh parmesan goes great with this
Instructions:
Dressing
1. Preheat oven to 350
2. cut 1/4 inch of the top off the garlic bulb, completely wrap in tinfoil. Pop in oven and let roast for 30 to 40 mins, until it's soft.
3. Once your garlic is roasted let it cool. In a medium bowl squeeze all the roasted garlic out, and then juice your lemon in to the bowl and whisk until smooth. Put your salt and pepper in then slowly stream in olive oil while whisking to emulsify.
Croutons
1. Preheat oven to 400
2. Place cubed stale bread in ziplock bag, pour in olive oil, salt and garlic. Close the bag and shake/mix well. Place on sheet pan and bake for about 15 to 20 mins flipping occasionally until they are dry and crispy
Shrimp
1. In medium skillet bring butter and oil to a medium heat, throw in your shrimp. Season with your old bay, salt, garlic and pepper. Cook until pink and no longer translucent about 3 to 4 mins depending on the size of your shrimp.
Salad
1. Wash, dry and chop lettuce in to desired size, I do about half inch pieces
Assembly
In a large bowl combine shrimp, lettuce and dressing, mix well top with croutons and parm. You can serve this in a big salad bowl or individually on plates. Enjoy!
