Coconut Cake

Ingredients:

Vanilla Cake

~ 2 1/2 cups flour

~ 2 1/4 teaspoons baking powder

~ 1 teaspoon salt

~ 1 2/3 cup sugar

~ 3/4 cup butter 

~ 3 large eggs

~ 2 teaspoons vanilla 

~ 1 cup milk

~ 7 oz of flaked sweetened coconut (for topping)

 

Coconut Frosting

~ 1/2 cup butter

~ 1/2 cup room temp, not melted coconut oil

~ 1 teaspoon vanilla

~ 1 1/2 cups powdered sugar

~ splash of milk if needed

 

Instructions: 

Vanilla Cake 

1.preheat oven to 350. Grease and place parchment rounds in bottom of 2 standard round cake pans.

2. In medium bowl sift together flour, baking powder and salt. 

3. In stand mixer or with a hand mixer, in large bowl beat softened butter for about 2 mins. Add in sugar and beat until light, fluffy and lighter in color, about 2 mins. Add in eggs and vanilla, beat for another 45 seconds. (Always make sure to occasionally scrape the bowl to combine everything evenly!!!)

4. On low, beat in flour mixture alternating with milk until almost combined, then hand mix until fully combined, do not over mix. Divide batter equally in to both pans, spread out evenly in pan and bake for 25 to 30 mins or until inserted knife comes out clean. Let cool for 2 hours before frosting. 

Coconut Frosting

Only thing different is the ingredients.

 

Assembly

1. Place one cooled cake layer on your cake plate, spoon about 1/2 cup or a little less of the frosting on the cake layer and spread it evenly to the edges. Place second cake layer on top and finish fully frosting with the remainder of the frosting.

2.Take your flaked sweetened coconut and gently press on to the sides and top of cake, when it's all covered it's finished and ready to enjoy!
