Ingredients:
~ 1 cup peanut butter
~ 1/2 cup maple syrup
~ 1 tablespoon of your preferred sugar substitute
~ 2 eggs
~ 1 teaspoon baking soda
~ 1 teaspoon vanilla
~ 1/2 teaspoon salt
~ 1/3 cup chocolate chips (optional)
NOTE: You can use a 3/4 cup of maple syrup or honey would probably be good and no sweetener. I believe you can use only sweetener. You can use 3/4 cup regular sugar. You can pretty much sweeten it any way you'd like!
Insructions:
1. Preheat oven to 350 degrees and line a sheet pan with parchment paper.
2. In medium mixing bowl whisk peanut butter, maple syrup, sugar substitute, eggs, baking soda, vanilla and salt together until thick and smooth. Add in chocolate chips and make sure it's thoroughly combined.
3. With a standard cookie scoop, scoop 12 cookies on to your parchment lined sheet pan and bake 8 to 12 mins (make sure to bake until fully cooked otherwise they won't have a good texture. You should be able to lightly touch the center and it won't dent in.) hope you enjoy!
