Ingredients:
~ 1 cup flour
~ 1 cup quick cooking oats
~ 1/2 teaspoon baking soda
~ 1/2 teaspoon baking powder
~ 1/2 teaspoon salt
~ 1/2 teaspoon cinnamon
~ 1 stick of butter
~ 1/2 cup firmly packed brown sugar
~ 1/2 cup granulated sugar
~ 1 large egg
~ 1 tablespoon milk
~ 1 teaspoon vanilla
~ 1/4 cup raisins
Instructions:
1. Preheat oven to 350 and line a sheet pan with parchment paper.
2. In medium bowl sift together flour, baking soda, baking powder and cinnamon. To the flour mixture add in oats, raisins and salt, give it a good mix.
3. In large bowl with stand mixer or hand mixer cream butter and sugar together for about a min until it's fluffy and smooth. (Scrape the bowl often to combine evenly) To your creamed butter and sugar, add in egg, milk and vanilla, beat for about 45 seconds or until it's fluffy and lighter in color.
4. With silicone spatula mix flour/oat mixture in by hand just until thoroughly combined.
5. With standard cookie scoop, evenly drop 12 scoops on parchment lined sheet pan. Bake for 12 mins. Let cool on cookie sheet for 8 to 10 mins before you transfer to plate or cooling wrack. Enjoy!
