Ingredients:
~ 2 cups oatmeal
~ 1 teaspoon baking soda
~ 1/2 teaspoon cinnamon
~ 1/2 teaspoon salt
~ 1 stick butter
~ 3 to 4 over ripe bananas
~ 2 eggs
~ 1 1/2 teaspoons of your favorite sugar substitute or 1/2 cup honey or maple syrup
~ 1 teaspoon of vanilla
Note: Chocolate chips and chopped walnuts would also be good in this I bet, I'd put about a 1/2 cup of each. Make sure to put them in your dry oat mixture so they stay suspended in the batter.
Instructions:
1. Preheat oven to 350. Grease and line a standard size loaf pan with parchment paper.
2. In blender or food processor, blend up oats until powdery and fine, about 2 to 3 mins. Add blended oats to medium bowl, add in baking soda, cinnamon and salt, stir until combined.
3. In large bowl with whisk or hand mixer add in soften butter (not melted) and whip until lighter in color, add in sugar substitute, honey or maple syrup (we prefer honey) and whip again until fluffy. On a plate use a fork to smash the bananas up really well and add them in to your butter and sugar mixture. Add in eggs and vanilla. Beat together for 1 min. Add in dry mix, stir by hand until just combined.
4. Pour batter in to loaf pan, bake for 35 to 40 mins. When the time is up remove from oven and let cool 15 mins. Enjoy warm with butter and we like to add a little sugar free syrup or maple syrup on top of ours!
