Ingredients:
~ 2 or 3 medium chicken breast
~ 2 teaspoons Dan-O's (trust us, buy it lol)
~ 1 teaspoon of garlic powder
~ 1 teaspoon salt
~ 1 teaspoon pepper
~ 1 tablespoon olive oil
~ 1 12oz bag of frozen mixed veggies
~ 3 medium potatoes or 1 can of potatoes
~ half of a medium onion
~ 3 to 5 cloves of garlic
~ 1 stick of butter
~ 1/3 cup flour
~ 2 cups chicken broth
~ 1/2 cup whole milk
~ 1 can of cream of chicken soup
~ 1 box/2 sheets of puff pastry
Instructions:
1. Preheat oven to 400. If your puff pastry is frozen set out to thaw for a bit while you are getting everything else ready. Wash and peel potatoes, cut in 1 inch squares, put them in a medium sauce pan, cover with water and bring to a boil. Once they reach a boil set your timer for 7 mins drain and set aside. Mince onion and garlic set aside.
2. Season chicken on both sides with Dan-O's, garlic powder, salt and pepper. In large skillet over medium/high heat add in olive oil and then sear chicken breast on both sides and cook for about 5 mins (don't worry about it being cooked through it's going in the oven) remove chicken from the pan set aside and let rest.
3. In the same skillet that you seared the chicken in, over medium/high heat, add in the butter, onion and garlic, scrape the brown bits from the chicken off the bottom of the pan while you cook that onion and garlic for about 2 mins. Whisk your flour in to the butter and add in your chicken broth and milk, whisk until it's smooth and starts bubbling and gets thick then turn off the heat. Add in your potatoes and mixed vegetables, cut up your chicken in 1 inch pieces and add that in as well, give it a good mix and pour it in to a 13x9. Cut your puff pastry to cover all of the filling. You can also do a sheet on the bottom and on the top either way is great.
4. Bake uncovered for 30 to 35 mins or until golden brown on top and enjoy!
