Ingredients:
~ 2 to 3 chicken breast
~ 2 cups uncooked rice
~ 2 tablespoons butter (optional)
~ 2 cans of cream of chicken or cream of mushroom soup
~ 2 packets of dry onion soup mix
~ 2 cups milk
~ 3 cups water
~ original recipe calls for 1 cup/can of mushrooms, we don't add them but I think it would be good!
Instructions:
1. In medium sauce pan pour in rice and wash until water runs clear, drain and then add butter and 1 cup of milk and 3 cups of water give it a quick stir. Over medium/high heat bring to boil, once it reaches a boil turn it as low as it can go and crack the lid, set timer for 20 mins, after the 20 mins turn off heat and fluff your rice.
2. Preheat oven to 350. Cut chicken in half lengthwise. In large bowl mix 2 cans of cream of chicken or cream of mushroom soup, 1 packet dry onion soup mix and 1 cup milk together until combined, add cooked rice and mix well. Pour rice mixture in to a 13x9 spread evenly, place chicken breast evenly over the top, shake the other dry onion soup mix over top of everything.
3. Cover with tinfoil cook for 45 mins, remove tinfoil and cook another 15 mins and enjoy!
