Bourbon Glazed Salmon

Ingredients:

~1 salmon fillet 
~1 cup bourbon of your choice (we used Jim Beam)

~1/2 cup apple juice

~1/2 cup dark brown sugar

~1 tablespoon soy sauce

~1/2 teaspoon salt

~1/2 teaspoon black pepper

~1/2 teaspoon garlic powder

~dash of cayenne

~2 tablespoons butter

~1 tablespoon olive oil

 

Instructions:

1. Run your hand along the salmon fillet to make sure there are no bones, if it has skin, check for scales and remove them if it has any. Rinse and pat dry with paper towel. Cut in to 2 1/2 to 3 inch pieces and season lightly with salt, pepper and garlic powder on both sides.

2. In a medium sauce pan, pour in bourbon, apple juice, brown sugar, soy sauce, pinch of salt, pinch of pepper, dash of cayenne. Turn burner on to medium/high heat stir constantly while it comes to a boil, turn down to medium/low and let boil stiring the whole time, let it reduce by half. When it thickens and it's reduced by half turn off burner add in 1 table spoon of butter, stir in and let cool.

3. In a large skillet over medium/high heat add in olive oil and 1 tablespoon of butter. Sear salmon pieces skin side down for about 4 mins and then flip and sear for about 2 mins depending on how thick your pieces of salmon are. They can be eaten rare or fully cooked, just however you prefer. Remove salmon from the pan and put it on a platter and pour bourbon glaze over and enjoy!
