Fresh Apple Cake

Ingredients:

~1 1/2 cups sugar

~ 3 eggs

~ 1/8 cup oil

~ 2 1/2 cups flour

~ 1/2 teaspoon baking soda

~ 3/4 teaspoon cinnamon

~ 1/2 teaspoon salt

~ 5 apples (we use honeycrisp)

~ 3/4 cup chopped nuts (we used walnuts)

~ 1 1/2 teaspoons vanilla

Glaze

1 1/2 cup powdered sugar

2 tablespoons of butter

1/2 teaspoons vanilla

2 teaspoons milk

 

Instructions:

1. Preheat oven to 350. Grease and flour a bundt pan really well!. Peel and core apples, cut in to small dice. When they are all cut put the salt over the apples and set aside.

2. In large mixing bowl beat together sugar, eggs and oil until fluffy and lighter in color about 1 min. In medium bowl sift together flour, baking soda and cinnamon. Add dry ingredients to the wet ingredients and mix until combined (batter will be thick) add in apples, vanilla and chopped nuts and stir by hand until fully combined. 

3. Pour batter in to bundt pan and bake for 50 to 60 mins until an inserted knife or tooth pick comes out clean

(Glaze) In small bowl melt butter, pour in powdered sugar, vanilla and milk. Mix well with fork

4. When cake is finished baking let cool completely before turning it out on to a platter. Pour glaze over and enjoy!.
